Lavender oil is obtained from lavender flowers by distillation and steam distillation method.

Lavender is a perennial aromatic plant in semi-shrub form. It has many branches that start to woody from bottom to top as they get older, grow up to an average of 50 cm and a maximum length of 1.5 m. On the branches are opposite 2-6 cm long, very short stalked, grayish green leaves. The flowers are collected in spikes 20-35 cm long with a stem and 5-10 cm without a stem.

Lavender flowers, which are purple in color and very fragrant, are extremely attractive especially for honey bees. The pigments responsible for the purple color formation of lavender flowers are delphinidin and malvidin.
